Note: The three casks chosen for this bottling were each filled on 14th January 1949. These casks were tipped ready for marrying on 12th May 1999. Each cask contributed to a third of the vatting character and only 48% of the original filling was left after the angels share

Tasting note: On the nose: Richly phenolic, cloves, coriander, orange and lemons. Some apples, hints of cereals and complimentary wood. On the palate: Rich, smokey, peaty phenolics. Wood influence with dried fruits and citrus. Some resinous spice; cloves and coriander. The finish: Rich citrus and wood, enveloped with peat.

“THE KILDERMORIE BOTTLE”

 

This rare Dalmore bottling is one of a limited production of only 12 bottles. Each bottle has been individually named, and has a specially commissioned, hand printed label. The unique print ink block design accompanies this hand blown bottle and is held within the brass mounted, oak presentation case. “The Kildermorie” bottle is presented with a certificate of authenticity signed by Richard Paterson, Master Blender, which explains the history of the bottle’s name. “The Kildermorie” bottle is named after the loch from which the Dalmore Distillery draws it’s water supply.

 

441      The Dalmore-62 Years Old Single Highland Malt

This rare spirit has been derived from 1868, 1878, 1926 and 1939 Dalmore. Over the years it has been racked several times and finally finished in an Oloroso “Mathusalem” Sherry butt from Gonzalez Byass, Spain. Distilled and matured by The Dalmore Distillery, Alness. In wooden presentation case. Single malt, bottled at natural cask strength of 40.5% volume

HISTORY: Alexander Matheson was a partner in the Hong Kong trading firm Jardine Matheson & Co, traders in everything from tea to opium and, of course, whisky.  In 1839, the very year of the first Opium War between China and Britain, Matheson purchased Ardross farm, on the shore of the Cromarty Firth and opened a distillery.  Whisky production at Dalmore was taken over by the Mackenzie family, who were able to buy the distillery and land as a result of the 1886 Crofters Act.  Much of the whisky went to supply long-standing customers and friends, James Whyte & Charles Mackay, who owned the popular blend of Whyte & Mackay.  The two businesses eventually merged in 1960.

 

Location: Situated just off the A9, the distillery is in a beautiful position overlooking the Cromarty Firth to the Black Isle.

 

Notes: The distillery was well sited by its founders in the middle of a fine barley growing district.  Its handsome offices are panelled with carved oak taken from a nearby shooting lodge.  During the First World War, it was used by the US Navy as a base for manufacturing deep-sea mines and was burned down as the result of a fire.  Production resumed again in 1922.  Doubled from four to eight stills in 1966.  Two of the stills in use today date from 1874.

 

 

WATER: River Alness (real name River Avron or River of Sorrow / Tears) which flows from Loch of Kildermorie.


 

COLOUR: Intense deep mahogany; dark yet warm and inviting.

 

 

NOSE: Refined and elegant.  A full spectrum of exquisite nuances extol their virtues in every direction.  The true beauty of this unique single malt is unsurpassed.  The hand of time has made its own inimitable mark, each racking has tempered and tamed this outstanding single Highland malt.

 

Warm, rich honey notes drift lovingly in the background but the “top note” of tangy orange chocolate takes centre stage before fleshy, soft fruits and heather complete this palette of aromas.

 

 

TASTE: Sensational and unique.  The different woods from American White Oak to the specially selected Matusalem from the Bodegas of Gonzalez Byass in Jerez de la Frontera have all made their distinctive contribution.  At first the weight of the spirit and the strong influence of wood attack the palate, but within a short space of time the warmth of the tongue arouses and stimulates the spirit – releasing an abundance of complex distinguished flavours which tantalise and tease the mouth.

 

It has taken years to create this masterpiece; it must therefore be given total respect and sufficient time to fully open and reveal its many mysteries.  The palate must be prepared - the time must be right!  This indeed will be a memorable occasion, never to be forgotten.  I would strongly suggest after taking some warm Colombian coffee with preferably some cream or milk, this noble spirit is allowed to drift over the tongue and held for sufficient time for these irresistible flavours to be released.

 

In view of its age, it will pass over like pure silk before the flavours of orange, chocolate, marzipan, almonds and soft spices are released.  To accentuate these outstanding attributes, a bitter chocolate such as Cote d’Or or Godiva should then be allowed to melt in the mouth.  The combination of coffee, The Dalmore and the bitter chocolate will ensure the experience is unforgettable.

 

This truly is a masterpiece forged from the Highlands of Scotland – a reflection of the heritage, skill and the many generations of dedicated people who have worked at The Dalmore.
